Instructions

  1. Step 1

Gather your tools and ingredients together.

Peel the potatoes. You can keep the skins on if you like, just wash them well.

  2. Step 2

Cut the potatoes into 1cm square cubes.

  3. Step 3

Place into a saucepan and fill with water to above the potato.

    Add the salt.

  4. Step 4

Cook on high until it starts to boil, then turn down to a simmer. Simmer for 5 minutes.

After 5 minutes, take out a piece with a fork. Poke the potato piece and if the fork enters easily, take off the stove and drain in a colander. You don't want to cook the potato until it falls apart easily.

Run some cold water over the potato cubes for a minute. This stops the potato from cooking further. Lay aside in the colander.

  5. Step 5

After about ten minutes when the potato is cooler, transfer the potato to a bowl, add about 1/4 cup of sultanas (for three potatoes) and place a good squirt of the coleslaw dressing. You don't need much, just enough to coat the pieces.

Stir with a spoon. If there isn't enough dressing, add a little more and stir.

Place the bowl in your fridge until ready to serve.

  6. Step 6

Serve. You can add some chopped spring onions, or a couple of sprigs of parsley to garnish.
