Easy and Fast Mini Cheesecakes

These little cheesecakes take only a few minutes to cook in the microwave. They have the taste and texture of New York style baked cheesecake. They are so delicious that you will be making them time after time.

Kitchen tools you will need:

  • Mixing bowl
  • Spoon
  • Whisk or beater
  • 2 coffee cups or 400ml ramekins
  • Microwave

  1. Step 1

    Get all your ingredients and tools together

  2. Step 2

    Place your cream cheese in the bowl and microwave for 30 seconds until it's soft, but not liquid.

    Add the rest of the ingredients. I used stevia as my artificial sweetener, but you can add castor sugar or the equivalent of other artificial sweetener.

    Beat until smooth

  4. Step 4

    Lightly spray the inside of the coffee mugs with spray oil, and spoon the mixture into each evenly.

    The mix will rise to about double so make sure your mugs or ramekins are tall enough.

  5. Step 5

    Place in the microwave and cook for 3 minutes on high. The mixture will fall in size as the cooking stops and they cool, that is fine. 

    Place on your bench for half and hour till cool enough to put in the fridge.

  6. Step 6

    After an hour of cooling (or more, it's ok to leave in the fridge for longer), tip them out onto serving plates. Decorate with some whipped cream if you have some.

Note

These can be frozen. Just wrap in cling wrap, or place in an airtight container.

They can be flavoured with peppermint, or other essence if you like.

They can be baked in the oven, but it really isn't worth it if you are just doing a few.
